Sweet Tamarind Dates Chutney or Imli Khajur Ki chutney is a finger licking good chutney made with tangy tamarind, sweet dates & jaggery, and some Indian spices. It is a sweet & sour in taste and an essential ingredient in making most of the chaat recipes. This has a long shelf life and can be stored in air tight containers for 2 months  in refrigerator. It is a must have dip for many snacks like samosas, pakoras and for chaat recipes.

Ingredients

  1. Deseeded dates – 8 nos
  2. Tamarind Pulp – 1 cup
  3. Grated Jaggery – 1/4 cup
  4. Red chilli powder – 1/2 Tbsp
  5. Cumin seed powder / Jeera powder – 1/4 Tsp
  6. Dry ginger powder or ginger – 1/4 tsp 
  7. water – 1.5 cups
  8. Salt – To taste

Preparationsweet tamarind chutney

  1. Soak 50 gms tamarind in warm water.
  2. In a pan boil jaggery, tamarind pulp and dates together with just enough water.
  3. After 10 minutes, add all spice powders and cook on a medium flame until it reaches a saucy consistency.
  4. Switch off the flame and mash it well with a potato masher or blender.
  5. Allow it to cool and strain using a soup strainer to get all the pulp out of it.
  6. We can store this in a airtight container in the refrigerator and use it for 15-20 days.
  7. Best chutney for chaat recipes.
