Chicken Bhuna Masala || Bhuna Chicken


  1. Chicken – 500gms
  2. Onion(small) – 4 nos (finely chopped)
  3. Tomato(small) – 4 nos (puree)
  4. Ginger-garlic paste – 3 Tbsp
  5. Green chilli – 3 nos (finely chopped)
  6. Lemon juice – 1/2 Tbsp
  7. Cashew – 8 nos
  8. Bay leaf – 1
  9. Cloves – 4 nos
  10. Anise star – 1
  11. Cinnamon – 1 small piece
  12. Cumin seed – 1/4 Tsp
  13. Cardamom – 2 nos
  14. Red chilli – 3 nos
  15. Fennel seed – few
  16. Chilli powder – 3/4 Tbsp
  17. Kashmiri chilli powder – 1/2 Tbsp
  18. Coriander powder – 1 Tbsp


  1. Marinate cleaned chicken pieces with 1 1/2 Tbsp of ginger-garlic paste, 1/4 Tbsp of red chilli powder, 1/2 Tbsp of Kashmiri chilli powder, 1/2 Tbsp of coriander powder, 1/2 Tbsp of lemon juice.
  2. Keep it aside for 30 minutes – 2 hours.
  3. Now we can dry whole spices like cinnamon, cumin seeds, dried red chilli, cardamom, cloves and star anise.
  4. Grind this whole spices to fine powder.
  5. Soak cashews in water and grind to a smooth paste.
  6. Sauté chopped onions in hot oil till it becomes translucent.
  7. Add 1 1/2 Tbsp of ginger-garlic paste, 1/2 Tbsp of coriander powder & 1/2 Tbsp of red chilli powder.
  8. Sauté till the raw smell of the masala is gone.
  9. Add tomato puree, chopped green chillies, bay leaf and salt.
  10. Add ground whole masala and marinated chicken pieces.
  11. Finally add cashew paste, 1.5 cups of water and cook for 3 whistles.
  12. When the steam is gone, add kasuri methi, black cumin & cumin seeds.
  13. Chicken Bhuna Masala is ready to serve with Naan, chapatti or paratha.

    Thanks, Julee! I m so glad you like the dish and the onion masala series ?? If you use chicken breast again then I d definitely suggest reducing the cook time as the bhuna part will overcook it. As for drier chicken, saute for longer until the sauce gets as thick as you d like. Thanks for letting me know how the dish turned out for you!
